PUMP UP THE PUMPKIN

Oct 18, 2017Stephen Charles Lincoln

The leaves change. The seasons change. Our seasonal flavors change. Which means, Pumpkin Blondies and Cookies are back! A tandem that combines two of my favorite creations.

They stir up the sweetest memories of my childhood. They make me think of people I'm close to that are not close by. Many images of fresh-baked treats from my mother, my aunts and family friends taking over our kitchen counters. Something about that pumpkin and spice blend I find most satisfying. I have no regrets for the quick shelf life many of these goodies had, thanks to my "just-one-more" attitude.

I always push back on those who say pumpkins are nothing more than a Halloween decoration or a mere Thanksgiving pie filling. No! We're long overdue for Chocoholics to make room for Pumpkinholics. (Though our Pumpkin Walnut Chocolate Chip Cookies satisfy both!)

Here at the bakery, they're the ultimate combination of deliciousness and healthy goodness. In addition to my recipes being protein-rich, pumpkin is a highly nutrient-dense food. In particular, it provides vital potassium, which has a positive effect on blood pressure; it's one of the best-known sources of beta-carotene, which helps lower the risk of some cancers and supports heart health; and it's a fantastic source of fiber, making you feel fuller longer. Snacking doesn't get much smarter.

I hope you check out my Perfect Pumpkin Parfait recipe that combines my Blondies and Cookies into an ideal seasonal dessert. Be it for you or to serve at a party. The directions are an easy 1-2-3. Enjoy it today and thru the holidays.

Now that they're back in season, I reach for one of these two snacks any time of day. I enjoy their lip-smacking goodness as much as moments from my childhood that come flooding back. I hope they unlock similar feelings in you. That is the signature of great comfort food.
